  • 1/2 teaspoon black pepper
  • 1 tablespoon Dijon mustard

For the Roasted Root Vegetables:

  • 3 large carrots , peeled and cut into chunks
  • 2 sweet potatoes , peeled and cubed
  • 3 parsnips , peeled and cut into chunks
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 teaspoon fresh thyme leaves (optional, for garnish)

Directions

Step 1

Preheat the Oven : Preheat your oven to 325°F (165°C). Position a rack in the lower third of the oven.
